Fish, seared in a pan, then marinated in a sauce made with spices, vegetables, vinegar and sugar to create a sweet tangy classic Spanish dish

Ingredients

  • 1 lb White fish fillets

  • ½ Onion

  • 3 Cloves Garlic

  • ½ Pepper

  • 2” Ginger

  • 1 Carrot

  • 1 Cup White Wine Vinegar

  • 1 Cup Water

  • ⅓ Cup Sugar

  • ½ TspCumin

  • 1 Tbsp Fresh Cilantro

  • ½ Tsp Thyme

  • ½ Tsp Coriander

  • 1 Bay leaf

  • Cornstarch as thickener, mixed with liquid from pan

Directions

  • Coat fish fillets with a little flour, preheat a pan, add oil to about ½ inch, when hot add fillets, cook about 3-4 min on each side, remove to a container that can handle the fish and vegetables, set aside
  • Drain some of the oil, add the onion, saute about 5 mins, then add the rest of the vegetables, stir around to mix in the flavors, add the water vinegar mix, the spices and the sugar, bring to a boil, cook about 10 mins till the carrots start to soften. Remove a couple of tablespoons liquid and add to a tablespoon of cornstarch, mix to form a slurry, add to vegetables and boil about another 5 mins till the liquid starts to thicken, pour over the fish, refrigerate 24 hrs to marinate serve chilled or at room temp
