Smoked sausage sautéed then mixed with a mirepoix of carrots, onions and celery, and cooked in a cream sauce with buttery soft potatoes, this is real comfort food

Ingredients

  • 1 ½lb Potatoes (6 or 7 potatoes, peeled)

  • 2 lb Smoked Sausage

  • 2 Tablespoons Butter

  • 1 Onion, diced

  • 2 Medium Carrots, diced

  • 2 Celery Ribs, chopped fine

  • 3 Cloves Garlic, diced

  • 3 Tablespoons Flour

  • 5 Cups Water

  • 1 Chicken Cube

  • 1 Cup Heavy Cream

  • Salt and pepper

  • All seasoning

Directions

  •  Start with potatoes, peeled and cut into 1 inch cubes
    Then into a colander and off to get rinsed and wait till we need them, Now for the mirepoix
    Two celery stalks, chopped A large carrot chopped An onion, again chopped
    And finally a couple of garlic cloves
  • Preheat a pan over medium heat
    When hot add the oil Now the smoked sausage, whole any smoked sausage will do
    Cover and let them get some color Move them around  periodically
    Now cut them into pieces And let them cook a little longer
    Set aside, we will need  them in a bit
  • All the bits that are stuck to the bottom of the pan will add flavor
    Turn the heat down a bit for now Add the butter and let it melt 
    Put in the onions Cover and Let them cook a few minutes to soften
    And now the rest of the vegetables That’s the mirepoix, the savory base
    Stirring to prevent sticking Sprinkle the flour over the vegetables We’re making a roux, it’ll thicken the soup mix well and Let them cook a few minutes Stirring to prevent sticking
    Now make a mix of equal quantities of cream and water
    And add Just a little at a time, stirring the whole time
    Once you’ve added about a cup full, just add the rest, continue mixing
    Add the stock cube and the seasoning Turn up the heat
    When you’re stirring make sure to scrape the bottom of the pan 
    As it heats up it will thicken
  • When it starts to bubble Add the potatoes and the sausage 
    Bring back to a boil Lower the heat and simmer covered about half hour 
    And there you have potato and smoked sausage soup
