Back in the day we used to go to that restaurant, named after a day of the week, and not Tuesday. They had the best spinach artichoke dip, served in a hollowed out bread bowl, yum. Well, as good as a dip it is, it’s also a delicious stuffing. In burgers, in chicken breast, works in mushrooms too. And it’s so easy to put together. The ingredients are the same as a dip or a stuffing, only the process changes slightly.
A while back I wanted to come up with a way to make burgers a little differently. Not that I’m knocking burgers, they’re delicious, but I’m always looking for something different. Spinach and Artichoke dip is nothing new, I mean, we’ve been dipping our nachos in it forever. So, why not stuff a burger with it. Very delicious. And who doesn’t like stuffed chicken breast, what a wonderful dish. Check my stuffed chicken breast roll post, it’s good.
As far as the spinach goes, there are a couple of options. Fresh or frozen, well, there’s a can too, good for Popeye, not so good for me, too much sodium. To use fresh, just wilt it down, heat some oil in a large pan, over medium heat. add the spinach and just keep stirring it around till it’s wilted . If frozen is all that’s available, unfreeze it in a pan or the microwave, allow it to cool and use that. I don’t use fresh artichoke for this recipe. However being a fan of fresh, feel free to, I’m sure it’ll be better for it.
The rest is pretty simple, everything in a bowl and mix well. And now we hit the fork in the road. If this is a dip, put everything in an appropriately sized oven safe dish and bake at 350 for 20 mins. If you’re stuffing something, well, stuff away, and cook the dish. And that’s it for spinach artichoke…… Either way, very simple and very delicious, thank you and enjoy

Ingredients
8oz Spinach (wilted or defrosted, cooled)
8oz Artichoke Hearts
4oz Cream, Cheese
4oz Parmesan
8oz Mozzarella
1 Tablespoon Garlic, minced
1/2 Teaspoon Ground Red Pepper Flakes (or to taste)
1 Teaspoon Garlic Powder
Salt and Pepper to taste
Directions
- Mix all ingredients in an appropriate size bowl
- If using as a dip, bake in the oven at 350 for 20 minutes
- If using as a stuffing, follow baking instructions of what you’re stuffing it into
- Enjoy however you serve it. Thank You
