Zucchini spears dredged in seasoned cheesy breadcrumbs and cooked in the air fryer till crispy, who says healthy snacks can’t be delicious

Ingredients

  • 2 Zucchini

  • 1 Egg

  • Kosher Salt

  • Fresh Ground Pepper

  • Seasoned Breadcrumbs

  • Fine Ground Parmesan

Directions

  •  I’ll start with two nice sized zucchini, sliced in half and each half cut into 3 spears, smaller zucchini will only be cut into quarters. The coating process can all be done on one plate, makes cleanup easier. Beat an egg with kosher salt and fresh coarse ground pepper, thoroughly coat all the spears, this will be the glue for the breadcrumbs
  • Mix ½ cup seasoned breadcrumbs with ½ cup of finely ground Parmesan cheese, this will create the perfect crispy cheesy coating. Now dredge all the spears in the breadcrumb cheese mixture, making sure to coat them well, leaving them on the mixing plate helps to keep the coating attached.
  • Place in a single layer in the air fryer and cook 15 minutes at 400 degrees, you may need to cook in multiple batches
