Grilled Sweet Potato Medallions

Sweet potatoes are delicious. They’re good for you too, they’re higher in fiber, vitamins A, B6 and C than regular potatoes. They also have a lower Glycemic Index. A good friend of mine gave me an indoor grill. And I love to cook them that way, they come out soft and sweet, with the grill lines, the black and orange go well together. So please read on for grilled sweet potato medallions.

It is popular to add sweet to sweet potatoes, cinnamon and brown sugar, and when I make sweet potato pie I top with marshmallows. But in this particular case, I’m looking more at something savory. this time I’m cooking the grilled sweet potato medallions with grilled asparagus and a grilled pork chop.

I have a recipe for plank potatoes, and this is a take on that. Sweet potatoes seem to be more abundant here in south east than when I lived in the north east. We have a lot of tropical influence, and the sweet potato is a tropical plant. The prep for cooking the sweet potato on the grill is very simple, just cut into medallions about 1/2 thick, and coat with a little oil, I add salt and pepper too.

I’m cooking them on an electric indoor grill, essentially a griddle. If you don’t have one, you can cook them in the oven, but you won’t have the grill lines. preheat the grill to max heat, lay the medallions as a single layer, wait 10 minutes, flip, and wait 10 minutes, that’s it, done. grill marks on the outside, soft and sweet on the inside. Ingredients

  • 2 Large Sweet Potatoes

  • 1 Tablespoon Olive Oil

  • Kosher Salt and Coarse Ground Pepper to taste

Directions

  • Preheat the grill. Wash and slice potatoes into 1/2 thick medallions. Place in a bowl with oil, salt and pepper, mix to coat
  • Place medallions on the hot grill, allow to cook 10 minutes, flip, cook 10 minutes more.
  • Remove medallions from the grill, serve as a side to you favorite dish. Enjoy
