I love to cook on the grill. It’s not just the flavors created, but the look. Grill lines just make the dish look better. Living in an apartment makes cooking on the grill practically impossible. However, it appears there is a solution, and, I have one. A very good friend of mine gave me an indoor barbecue! Yeah, it’s awesome, and a wonderful gift.
Essentially it’s a griddle, and it definitely opens up the possibilities for dinners. So, the first meal was a pork chop, but, I wanted potatoes with my pork chop. Unfortunately potatoes don’t cook well on the grill. However, Grilled Plank Potatoes do! Read on to learn more

What the heck are grilled plank potatoes. Well, in it’s simplest form, it’s potatoes that you can cook on the grill. Grill marks and all. Grilled plank potatoes are just super wide fries that cook on the griddle. For this particular recipe I’m using Russet potatoes, but sweet potatoes come out really well. A little crisp on the outside, and soft on the inside. The prep is the same as oven fries, rub with oil, salt and pepper. Put them on the griddle and they’re ready in 20 mins, flip in the middle. Because they’re not labor intensive and cook quickly, they are both ideal as part of my cooking for one series and part of my quick easy dinner section. Now, I’m using an indoor barbecue, however, any griddle will do. Maybe you have a cast iron one that goes on the stove, or a griddle pan, they will all work.
How
Start with a whole potato. Either sweet potato or russet. It just has to be of a decent size to make grilled plank potatoes. Cut them lengthwise into 1/2 thick slices. A decent long sharp knife is required for this. I would also suggest holding the potato with something when cutting it. A carving fork works well. Also note that sweet potatoes are a little harder to cut than russets. You’ll probably end up with 4 or 5 slices, don’t worry about the end pieces, they cook up just fine.
Normally you would toss oven fries in a bowl with oil, salt and pepper and garlic. Unfortunately, here, things are a little different. I’ve found it easier to put some oil on a plate and oil up the plank that way, then sprinkle liberally with salt pepper. I like garlic with everything, fries are included, however, fresh garlic doesn’t work here, so, sprinkle on some garlic powder. That’s it, prep done. While the prep work is being done, the griddle can preheat to 450 (that’s the hottest setting on mine)
Cook
Now lay the potato planks on the griddle, cover and leave alone for 10 mins. After the 10 mins, flip for another 10. You’ll notice those wonderful grill marks have appeared on the planks. So, after 10 mins, remove and plate. They look really good. And there you have it, grilled plank potatoes, easy and quick. Clean up is pretty simple too, the griddle is non stick, so, allow to cool and wipe with a sponge, and then the prep plate. I think the time can definitely be justified to cook this one.
