1 Egg per serving
1 Cup All Purpose Flour per serving

- Mix flour, egg and salt with the stand mixer using the mixing paddle, when it starts to ball up use the dough hook, it’s done when the dough springs back when poked with your finger, about 5 minutes of mixing
- Remove from the mixer, form into a ball, wrap in saran wrap to prevent drying out and let rest 30 minutes to relax
- Cut off pieces about the size of a softball, roll into a sausage shape and pass through the pasta roller. start with the rollers set at maximum gap, then reduce with each pass till the sheets are as thin as you like, then either pass through the spaghetti cutter attachment, or roll up the pasta sheets and cut into thin slices, unravel into a large bowl with some flour to separate the individual strands
- Drop into boiling water for about 2-4 minutes, then it’s done, serve with your favorite sauce, enjoy
