The recipe is quite simple and the ingredients easily available. It is important to understand that pao De Queijo has to be made with Tapioca Flour. It’s what creates the chewy inside, and what makes it gluten free. Check at your local market, if it isn’t available locally, you can always buy it online. So lets get into making some delicious Pao De Queijo. It starts with heating up the oil, water, milk and salt. This allows the liquid and the flour to mix better. When the liquid is hot, but not quite boiling, add to the flour, and mix well. It’s going to have the consistency of gelatinous goo. now let it sit and cool for about 15-20 minutes

The mixture has to cool because the next step involves eggs. If I were to mix them into a hot mixture they would cook. So wait till it’s cool to the touch. Add the eggs and mix well, I do everything by hand, but a stand mixer would work just fine. When the eggs are mixed in, the dough will have the consistency of cottage cheese. I think it makes life a little easier, than looking in the bowl with a worried expression hoping that everything will be ok.

As simple as a tapioca flour dough, mixed with cheese, formed into balls and baked to create a crusty, cheesy bread ball, this is a delicious staple in Brazil

Ingredients

  • ½ Cup Olive Oil

  • ⅓ Cup Water

  • ⅓ Cup Milk

  • 1 Teaspoon Salt

  • 2 Cups Tapioca Flour

  • 1 Cup Cheese, mix of cheddar and Parmesan

  • 2 Eggs Beaten

Directions

  • Pour oil, water, milk and salt into a pan, bring to a boil and remove from the heat. Add the tapioca flour mixing well, it will look like a gelatinous goo. Let sit for 10-15 minutes to allow it to cool, otherwise the eggs will cook when added. Add the eggs and mix well, it will have the consistency of cottage cheese. Add the cheese and continue to mix, it’s important to make sure the mixture is an even consistency of the eggs, flour mixture and cheese. Coat your hands with oil, this will prevent the dough from sticking to you, it will also give a smooth exterior to the dough balls. Use a teaspoon to take out enough to make a dough ball a little smaller than a golf ball, roll it smooth in your hands and place on a foil lined baking tray. Add oil to your hands as needed. Place in a preheated 375 degree oven for about 25 mins till they are puffed up and golden brown on the outside. Yield will be about 20 balls
