Roasted Tomato & Pepper Sauce | Big Flavor, Simple Ingredients — Smoky, smooth, and made from grilled veggies. Perfect for pasta, chili & more.

Ingredients

  • 5 lb Tomatoes

  • 1 Red Pepper

  • 1 Green Pepper

  • 1 Large Onion

  • 1 Whole Garlic

  • 1 Habanero Pepper (optional)

  • 1 tbsp Oregano

  • 1 tbsp Basil

  • Kosher Salt

  • Coarse Ground Black Pepper

Directions

  • Add kosher salt and black pepper to olive oil, coat all the vegetables, cut top off a globe of garlic to expose cloves and coat with oil mixture. Roast vegetables on the barbecue till charred, about ½ hr, remove and allow to cool. Remove tomato skins and cores, seeds from peppers, seeds and webbing from habanero, remove garlic cloves from casing, put everything in blender, blend till smooth, pass through a sieve to remove any other skin and seeds, put in a pot, add oregano and basil and 2 tbsp tomato paste, simmer for half hour to reduce some. Store in jars, use as needed
