Delicious Cottage Pie Double-Baked Potatoes:

Potatoes baked, then filled with meat sauce and topped with cheese and mashed potatoes, then baked again to create a delicious variation of the classic cottage pie

Ingredients

  • 4 Large Russet Potatoes

  • 2 Cups Meat Sauce

  • ½ Cup Finely Grated Cheese

  • ½ Stick Butter

  • ½ Cup Milk

  • Salt

  • Pepper

  • Oil

  • Garlic powder

Directions

  • I’ll start with 4 nice sized russet potatoes, clean well, they grew in the ground. Coat with olive oil and kosher salt, this will give a nice crispy skin when baked, poke a few holes in the top to vent. To reduce the baking time in the oven, I’ll microwave them for 12 minutes, which converts to 3 minutes per potato in case you’re cooking just one or two. Then, transfer to a foil lined baking tray and bake in a preheated 400 degree oven for  about half an hour or so.  to check if they’re done look for an internal temp of about 210 degrees, then they’ll be buttery soft. When done, allow to cool for about 20 minutes. Although, I still hold them in a paper towel, they’re still warm
  • Cut  a nice sized cap off the top and scoop out the potato and put in a bowl, don’t scrape all the way to the skin, leave about ¼ inch in the potato.  Now put the shells back in the oven to crisp up while we make the mashed potatoes Add ½ stick of butter  and mash with a potato masher, make sure the butter melts and mixes well.  Now for the milk, again, make sure to mix well, the potatoes will now have a smooth consistency, if they’re still a little  thick you can add more milk. Add the spices and mixing well
  • Now for the assembly, remove the potato shells from the oven, it’s time to fill them. First, ¾ fill of meat sauce.. Now some grated cheese, and finally a nice cap of the mashed potatoes, Back to the 400 degree oven to melt the cheese and brown the mashed potato cap, a few minutes under the broiler helps too Serve and enjoy your cottage pie double baked potatoes
