Cilantro Garlic Dipping Sauce

For some reason we seem to love dipping our food into a sauce of some kind. Ketchup, cheese, barbecue, there are so many kinds. So, this particular post is for cilantro garlic dipping sauce. It’s the best dipping sauce for my oven Yuca fries

The history

Ever since we were little kids we loved to dunk our fries in some kind of sauce. Of course the most iconic come from the place with the Golden Arches. And the sauce is obviously ketchup. Fries are the ultimate finger food, and kids love to make a mess. And that’s where this whole thing started.

Well, let’s fast forward a whole bunch of years. The kids are grown. We all eat a little healthier now. Fries are now oven fries not fried fries. But we still need a dipping sauce.

Location plays a big influence here. I moved to South Florida, with a strong Caribbean and Cuban influence. Cassava is big down here, specifically the root, which is what the Cubans call Yuca. And I like Yuca fries

The sauce

There’s a local restaurant chain that sells Yuca fries, and they are good. But going back to the root of all this, well, I need a dipping sauce to go with the fries. Well, as luck would have it, they also have a phenomenal dipping sauce for the Yuca fries, yep, you got it, cilantro garlic sauce. Yeah, it’s a copycat, but, sometimes something is so good, you can’t improve, only duplicate. It’s a very simple sauce to make, but sometimes the best things in life are.

What’s in it

We’ll start with a cup of plain Greek style yogurt, you can use low fat or fat free if you like. To that, add a handful of fresh cilantro, finely chopped. This is very subjective depending on how much you like cilantro. But either way it has to be fresh. A couple of cloves of garlic comes next. That’s also somewhat subjective. I’m a huge garlic fan, if you’re not just use one. For this type of recipe grating the garlic is better than cutting it up, the reason being it allows the flavor mix better. Add 3 tablespoons of olive oil, this will add a flavor note and create a better texture for the sauce. Squeeze the juice from half a lime. This will give the sauce a light citrus flavor with a little bite. Grind a little salt in there too. Now, just mix everything up really well

And there you have it, the perfect dipping sauce to go with the yuca fries you just cooked. Thank you and enjoy
